Food - Recipes for Sandy


Another low-glycemic-index snack

1 lb dried chickpeas
Juice of 1 lemon
1/4 - 1/2 tsp turmeric
1/4 tsp red chilli pepper, cayenne, or paprika
Salt and pepper to taste
Optional: 2 tomatoes or carrots, chopped
1 red onion, diced (use with tomato, not carrots)

Cover the chickpeas with lots of cold water and soak overnight. Drain, add water to cover by at least 2", add turmeric and chilli powder, if using, and cook till done.

Drain, if needed. Season with salt, pepper, and lemon juice and toss to mix. Serve topped with chopped vegetables.

This makes a great snack. The amount of lemon juice you add is entirely up to you. Some people like it more lemony, some like it less. You can also serve it with toasted pitas on the side, and it's a good way to get your daily requirement of vegetables.

I made a really delicious vegetarian noodle recipe this weekend, and I will post that recipe - it's been a bit stressful for the past 36 hours, as my mum was in the hospital and had taken a turn for the worse. But I spoke to her geriatrician today, and he says she's turned the corner.
